Heat a tablespoon of oil in a large skillet or wok. Add a variety of colorful vegetables such as bell peppers, broccoli, carrots, snap peas, and mushrooms. Stir-fry until the vegetables are crisp-tender.
Spread pizza dough or pre-made crust with tomato sauce. Top with slices of fresh mozzarella cheese, tomato slices, and fresh basil leaves. Bake in the oven until the crust is crispy and the cheese is melted and bubbly.
Sauté onions, garlic, and ginger in a pot. Add a selection of chopped vegetables such as potatoes, cauliflower, carrots, and peas. Stir in curry powder or curry paste and coconut milk. Simmer until the vegetables are tender. Serve with steamed rice or naan bread.
Cook lentils according to package instructions and season with taco spices such as cumin, chili powder, and paprika. Serve the seasoned lentils in taco shells or tortillas and top .
Cook your choice of pasta and let it cool. Toss the pasta with cherry tomatoes, mozzarella balls, fresh basil leaves, and a drizzle of olive oil and balsamic vinegar. Season with salt and pepper. Serve chilled as a refreshing pasta salad.
Cook rice according to package instructions and let it cool. In a large skillet or wok, heat oil and sauté diced vegetables such as carrots, peas, corn, and green onions. Add the cooked rice and stir-fry together. Season with soy sauce and sesame oil.
Slice an assortment of colorful bell peppers, onions, and zucchini. Sauté the vegetables in a skillet with olive oil and season with fajita spices such as cumin, chili powder, and paprika. Serve the sautéed veggies in warm tortillas.
